Chicken Bacon Ranch Taquitos

Baked Chicken Bacon Ranch Taquitos

 

My whole family LOVED this recipe from Six Sisters Stuff here.  I used some leftover chicken from a Rotisserie Chicken and some leftover Prime Rib Roast .

1 8 oz package of cream cheese

4 cups meat (chicken, beef or whatever you have leftover)

12 slices of back cooked and crumbled

2 cups of cheese (their recipe called for Monterey Jack, but I only had Colby Jack- what I always have)

1/2 package dry Ranch dressing mix

1/2 tsp garlic powder

Salt, and pepper to taste

20 flour tortillas

cooking spray

salt for the top

Mix filling and fill and roll tortillas tightly.  Place seam side down on cookie sheet.  I make 10 at a time and save the rest of the filling for the next night.  They are best freshly cooked.  Spray with cooking spray and sprinkle with salt.  Cook at 425 for 15-20 min.  Tastes great dipped in Ranch, Sour cream, or Salsa Ranch (equal parts of ranch and salsa).

Pizza Pockets

This was a product of “What is the fridge that I can whip up for dinner”.  It turned out to be a big hit and will definitely be on our menu rotation.  Totally kid friendly and a great last minute maker.  Takes little to no time to prepare and only 13 min. to bake.  A great idea for those busy and hectic nights.

1 package Reduced Fat Pillsbury Grands Buttermilk Biscuits

1 package Turkey Pepperoni Minis (found in the lunch meat section)- I didn’t use the whole package

1 cup shredded mozzarella cheese

1 cup pasta sauce

Take a biscuit and smash it out flat.  Spread about a tsp of the pasta sauce, sprinkle on some mini pepperonis and some mozzarella cheese and fold together and pinch together.  I will probably try and and pinch them harder since you can see that they kind of bust open a bit.  That didn’t take away from the taste however.  The kids devoured them and the cleanup was awesome (especially since we also used paper plates).

Pilgram Hats

This was a fun little kids treat to make for the Thanksgiving holiday.  I made the ones in this picture a few years ago.  I made some to take for Sharing Time at Church last Sunday and didn't get a picture of them. 

It's a Fudge Striped Cookie upside down.  Glue the Reeses Mini Peanut Butter Cup on upside down with yellow squirt can icing by putting the frosting around the bottom edge of the PB cup and placing it upside down on the cookie.  Make the buckle with a little more frosting and an Orange Tic Tac.  This time I didn't use an orange Tic Tac, I just used a circle of red icing.  The Tic Tacs are REALLY hard and sometimes kids crunch down on them expecting them to be candy- but they are harder than that- so this time I just used the red icing for the buckle.  I  didn't get a picture of them before they scarfed them up in Primary.

Flutter Dogs

This was a fun idea we did for my daughter's birthday party we found in a magazine. We used cresent rolls- cut each triangle in 2- or each rectangle that unrolls from the tube into 4. You should get 16 balls of dough. Lay them out with a small space between each pair. Cut a slit for the antennas and press it between the wings. Cook at 375 for 15 min. and ENJOY them before they fly away.

Blueberry Pancakes with Blueberry Syrup


I made these Easter Sunday morning and this will for sure be our new Easter Sunday Breakfast tradition. It was SOOOO yummy!! The girls said it was just like being at IHOP.

I made regular pancakes (the just add water kind- Krusteaz). It made about 16 pancakes. I added 2 tsp Vanilla (mine is double strength vanilla). I used a 12 oz package of frozen blueberries thawed- take out 1 cup of the blueberries for the syrup and add the rest of them to the pancake mix.

Blueberry Syrup Recipe:
1 cup sugar
2 TBSP Cornstarch
1 cup water
1 cup fresh blueberries
1 TBSP Butter

Add sugar and cornstarch to a saucepan and mix together. Add Water and bring to a boil- cook for 3 min. Stir in blueberries and reduce heat. Simmer for 8-10 min until berries burst and syrup is thick. Stir in butter until melted. Serve over pancakes with a squirt of whipped cream.
*Note: We didn't eat all the pancakes, but all the syrup was gone- you may want to double the sauce if you want it to go on all of the pancakes. We used the leftover pancakes the next day with just maple syrup.

Ham & Cheese- Shells & Trees

This is throw together poor man's food, but it's an absolute kid favorite at our house. I mostly make it when Brady is out of town and don't feel like making a big production for dinner. It's got your carbs, protein, and veggies all in one dish and the kids gobble it up. It's not really a "RECIPE" but it's just an idea that I'm throwing out there that is very kid friendly (unless your kids won't eat broccoli, but maybe they will in this dish).

3/4 box Shells pasta, cooked and drained (small shells, medium shells, or just "shells", but not large or Jumbo shells)
1 cup cooked broccoli chopped up
Ham, chopped (how ever much you want really)
1 jar Bertolli Alfredo sauce.
a little salt & pepper to taste.

Combined it all- kind of like a gullosh. My kids really love this. Brady even eats this great.

Mmmmm Pizza!!


I love this pizza recipie because it's different from the norm' and it's got lots of hidden spinach in it. This kids love it and we gobble this up in one night. Plus, it's so easy and fast to put together and bake!

Chicken Alfredo Pizza
1 pizza crust, any way you like to do it: make your own or buy one prepared. I use the prepared ones in the package
Beretolli Alfredo Sauce. Open a jar and use however much you like on your pizza.
1 Chicken breast cooked and cubed
Fresh spinach leaves, chopped up small. Use however much you like
Shredded Mozzerella Cheese
Shredded Parmesan Cheese (not the stuff in the can)
After you've assembled you pizza I like to sprinkle it with a little salt, pepper, garlic salt, and Italian Seasoning (the kind with basil, oregeno, and stuff like that in it)

Cook according to the package directions on the pizza crust. Usually 450 for 10-12 minutes.

Chicken Rollups


This recipie is one of my family favorites. In fact, it is Kayla's favorite food. She asked for this for her birthday dinner- she asks for me to make this every year on her birthday. It is so versital too. It's nearly impossible to mess up (that is unless you burn it

2 chicken breasts cooked and cut up into small pieces or shredded
4 oz cream cheese (you can even use lite cream cheese or it is really good with chive & onion cream cheese
*if you use plain cream cheese it is good to add a little flavor to the filling by adding salt, pepper, garlic powder and onion powder to your liking
1 pkg Refrigerator cresent rolls ( I always use the reduced fat ones)
Unroll them into rectangles(2 cresent rolls hooked together). Pinch the seam together and cut in half to make a square. Put about a tablespoon of filling into the center and fold up sides and pinch. Place on a cookie sheet

Cook at 375 for ~10-15 min. (check on them regularly- they'll be light brown when finished)

You can serve them with gravy over the top. The kids usually don't like the gravy, but Brady & I do. The gravy is just a can of Cream of Chicken soup undiluted warmed up.

The original recipie called for dipping the uncooked rollups in melted butter and then dipping them in Italian Bread crumbs. I stopped doing that because it was so messy and time consuming and they tasted great without it. Besides, the girls like to pick them up with their hands and eat them since they don't like the gravy on them and the bread crumbs would make a mess. You can do that if you like.

Another great variation to this recipie is to use leftover Thanksgiving turkey for the chicken and use leftover turkey gravy over the top. It's a great way to use up that enormous amount of turkey leftover (however, there's not usually much gravy left at our house).
